coconut kiwi upside down cake

coconut kiwi upside down cake
adapted from raspberri cupcakes


ingredients:
1/4 a stick of butter, melted
2 stick of butter, softened
2 tbsp brown sugar
4-5 gold kiwifruit, peeled and cut into 1cm slices
1 cup caster sugar
2 large eggs
1 cup self-raising flour
1/2 cup shredded coconut
juice of 2 limes
2 3/4 cups of coconut milk


1. Preheat oven to 180 degrees C. Grease and line a 20cm round cake tin. Pour the melted butter over the base of the pan and sprinkle with the brown sugar, then top with a single layer of kiwifruit.
2. Use an electric beater to beat the butter and sugar for 3 minutes or until pale and creamy. Add the eggs one at a time, beating well after each addition. Fold in the flour, coconut, coconut milk, and lime juice until combined.
3.Pour cake mixture over the kiwifruit and smooth top with a spatula. 
4. Bake for 40-45 minutes or until a skewer inserted into the centre comes out clean. 
5. Cool on a wire rack for 10 minutes and then turn out of tin.

strawberry shortcake

i've been grounded from baking for the past ten days. but the second my groundation ended, i ignited my gas oven and went to work. i made mini strawberry shortcakes drizzled with strawberry syrup. i've never eaten one and they looked so pretty and dainty. i had to give them a try.

build your own bread

with the help of food network magazine i created my own bread recipe. they provided a basic bread recipe and i chose the add ins.
 i dont know what to call it yet. but it is the best bread i've ever had.

pear-coconut-walnut-spice-bread with cream cheese frosting


my recipe:
Mix 1 1/4 cups flour,
3/4 cup sugar,
1 teaspoon each baking powder and salt, and
1/2 teaspoon each baking soda, cinnamon and nutmeg in a large bowl;
add 3/4 cup of walnuts kind of crushed and,
1 cup shredded, sweetened coconut

In a medium bowl, whisk 2 eggs,
 1/2 cup vegetable oil,
1/2 cup plain yogurt
1 teaspoon vanilla extract
 and 1 teaspoon citrus zest (optional)
Stir 1 cup shredded pears into the egg mixture,
then fold into the dry mixture until just combined.

bake about 55 minutes. cool for 30 minutes. make some frosting.

cream cheese frosting recipe:
Whisk 1 cup confectioners' sugar,
3 tablespoons softened cream cheese,
2 tablespoons milk and ¼ teaspoon vanilla extract.

spread and let set for 15 minutes.

plain yogurt

this morning i sent my dad to the store for plain yogurt. he came back with a huge tub when i only needed a half a cup. so i am stuck with a massive amount of yogurt and the expiration time bomb is ticking. what to do, what to do?
